An Easter Feast Menu & Recipes

If you’re hosting Easter, we have compiled a menu of delicious recipes to make Easter easy. Bright Spring flavors, fresh produce, and savory ham are what makes Easter cooking delicious. Oh, and a sweet Easter treat too.

Citrus Baked Ham

Recipes:

Citrus Ham:

Place a 6-8lb fully cooked bone-in ham in a roasting pan. Score the surface and stud with cloves if desired. Cover in foil & roast at 325 degrees for 1.5 hours. In a small saucepan, combine a cup of orange soda, a cup of orange marmalade, and a half a cup of brown sugar. Bring to a boil and cook for 15 minutes until reduce by half. Stir in a quarter cup Dijon mustard. Glaze the ham and bake another 30 minutes, continuing to glaze with remaining orange mustard glaze. Once ham is well-heated thru, it’s ready to slice & eat.

Cheesy Potatoes:

Microwave a 32oz bag of southern-style diced hash browns in a bowl until defrosted. Stir in 2 c. shredded cheddar, 16oz sour cream, can cream of mushroom soup, 1/4 c chopped onion, 1/4 c melted butter, tsp salt, 1/2 tsp pepper. Pour into greased 13x9 casserole and bake at 350 degrees for 45 minutes. Garnish with parsley.

Cinnamon Glazed Slow-Cooker Carrots

Spray the slow cooker with nonstick spray. Add 2 lbs. baby carrots and 2 TBL melted butter. Cover and cook on high 3-4 hours until tender. Before serving, add 1/2 c. brown sugar, 1 1/2 tsp cinnamon, 1/2 tsp. ground ginger, and 1/2 tsp salt to the slow cooker and stir into carrots.

Easter Basket Mini Cheese Cakes

Mix 1 c of graham cracker crumbs with 3 TBL melted butter & 2 TBL sugar. Press into paper lined muffin tins (makes approx. 18 mini cakes). Beat 3- 8oz softened cream cheese packages with 3/4 c sugar & 1 tsp vanilla. Beat in 3 eggs, spoon over crusts; bake at 325 degrees for 30 minutes; refrigerate. Toast a cup of flaked coconut in the microwave, then sprinkle over cooled mini cheese cakes. Top with jelly beans or chocolate eggs.
